Ingredients
  

  • 12 carrots tops removed
  • 3 tablespoons butter melted
  • 3 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped parsley optional, for garnish

Method
 

  1. Preheat Oven
  2. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
  3. Prep Carrots
  4. Slice carrots into 2–3 inch pieces on a diagonal for presentation. Transfer to a large mixing bowl.
  5. Season & Coat
  6. Drizzle melted butter and honey over carrots. Add salt and pepper, then toss everything to coat evenly.
  7. Roast
  8. Spread carrots in a single layer on the prepared baking sheet. Roast in the oven for about 20 minutes, or until tender and lightly caramelized.
  9. Serve
  10. Remove from the oven and garnish with chopped parsley if desired. Serve warm.
