- Preheat Oven
- Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
- Prep Carrots
- Slice carrots into 2–3 inch pieces on a diagonal for presentation. Transfer to a large mixing bowl.
- Season & Coat
- Drizzle melted butter and honey over carrots. Add salt and pepper, then toss everything to coat evenly.
- Roast
- Spread carrots in a single layer on the prepared baking sheet. Roast in the oven for about 20 minutes, or until tender and lightly caramelized.
- Serve
- Remove from the oven and garnish with chopped parsley if desired. Serve warm.
