Method
 

  1. 2 slices hearty bread (whole-grain or sourdough)
  2. 1 ripe avocado
  3. 2 large eggs
  4. Juice of ½ lemon
  5. Salt & black pepper, to taste
  6. Optional toppings: red pepper flakes, chopped herbs, hot sauce
  7. Toast bread to preferred crispness.
  8. Mash avocado in a bowl with lemon juice, salt, and pepper.
  9. Cook eggs sunny-side-up or poached in a skillet or pan.
  10. Assemble toast: spread avocado mix on toast, gently nestle the egg on top.
  11. Finish with your choice of toppings and serve immediately.
