  • 1 whole chicken about 4–5 pounds
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 lemon halved
  • Fresh herbs for garnish optional

Method
 

  1. Preheat your grill to medium-high heat (about 375°F to 400°F).
  2. Prepare the chicken: Pat the chicken dry with paper towels.
  3. Season: In a small bowl, mix olive oil, garlic, rosemary, thyme, paprika, salt, and pepper. Rub this mixture all over the chicken, including under the skin for maximum flavor.
  4. Stuff the chicken cavity with the lemon halves.
  5. Grill: Place the chicken breast-side up on indirect heat (away from direct flames). Cover and grill for about 1 hour, or until the internal temperature reaches 165°F (74°C) at the thickest part of the thigh.
