Ingredients
  

  • 10 fresh mint leaves plus extra for garnish
  • ½ lime cut into 4 wedges (plus 1 wedge for garnish)
  • 2 tablespoons white sugar or simple syrup, adjust to taste
  • 1 ½ ounces 45 ml white rum
  • ½ cup 120 ml club soda (or sparkling water)
  • Ice cubes

Method
 

  1. Muddle: In a sturdy glass, muddle the mint leaves with 2 lime wedges and sugar. Use a muddler or the back of a spoon to release the mint oils and lime juice.
  2. Add lime: Squeeze in the juice from the remaining 2 lime wedges, then drop them into the glass.
  3. Pour rum: Add the white rum and stir to combine.
  4. Add ice: Fill the glass with ice cubes.
  5. Top off: Pour club soda over the ice until the glass is full. Give it a gentle stir.
  6. Garnish: Add a sprig of mint and an extra lime wedge for garnish.
